You may not know exactly what job you want, but you certainly know what kinds of things you are interested in. Pick one or two that you like the best and focus on them for the purposes of this statement. Then state that your educational goal is to explore and identify ways that can put your interest in these fields to use. It's best to have some concrete examples that show your commitment or how your interest developed. So, take a look at what you've done for community service or extra-curriculars. If you've been working with kids, pick education. If you spend most of your life on the computer, pick IT.

There's nothing saying you have to commit to following through on whatever you say-- they're not going to make you pay your scholarship back if you change your mind. Just about everybody changes their mind at some point during their college years as they get exposed to new ideas and experience a wider community. All that the scholarship committee / Admissions team is looking for is somebody who isn't going to waste their time and money. So, pick any field you like, state why you're interested in it clearly, think about what kinds of things you could do with it, and back it up with a couple of examples that show how your interest developed. That's all you need to do

I was born pre-mature weighing only two pounds and diagnosed at the age of ten with Childhood Nephrotic (Nephritic??) Syndrome. All throughout my life, my health caused my parents great concern and worry. They had to carry a heavy load raising me, and I want do something to return the favor, to show them how much I appreciate all that they have done to ensure that I have the best care possible. This is why I am applying to the foundation for an educational grant. My focus in college obviously is to be academically successful, but more importantly prepare myself for my professional future as a pharmacist. With my medical challenges, I will have a harder time to achieve, but with enough determination and persistence with succeed. (This needs more information)I plan to attend the University of North Carolina at Greensboro for two years and then transfer over to the University of North Carolina at Chapel Hill for another four years. A passion of mine to help those in poverty, help those less fortunate than me and be an exemplary citizen. This scholarship would provide the extra incentive and further motivate me toward my goals and purpose in life. I leave you with the words of Helen Keller. She once said, “Many people have a wrong idea of what constitutes true happiness. It is not attained through self-gratification, but through fidelity to a worthy purpose.” (How does this quote fit? You need to close this differently)

Don't sweat it. It's not a contract. The best thing is to focus on something you are passionate about and write about how you may incorporate that into a career and/or degree. I would think about your dream job and go from there :)
